Tuscan Focaccia with Grapes

Schiacciata all’ Uva – Schiacciata with Grapes is a sweet focaccia typical of Tuscany,a dessert of poor origin.

Mostly cooked at the time of the harvest  using black grapes called  canaiolo,typical tuscan variety of vine  with small grains. A dessert of modest origins ,well evidenced by the simplicity of the ingredients: bread dough, olive oil, sugar and black grapes.

Schiacciata means pushed down, squashed and that’s what we do with the dough and the grapes.

400g=2 cups  00 flour /all purpose/plain flour                

100g =1/2 cup sugar                       

400 g = 2 cups small black or white grapes                      

2 cups of water (or more)                        

 5 tbsp.extra virgin olive oil          

10g yeast

Melt  3 spoons of sugar and the crumbled yeast in a cup of warm water 

Pour the flour in a bowl

Add 3 spoons of oil,mixing the dough well and the yeast and  1 cup water(more precisely as much as  needed)

Mix everything and knead the dough for 5 minutes.

 Leave to rise for an hour in a warm place.

Heat the oven to 180° C/350 °F 

Roll it out into a greased baking pan. 

Spread on the base  the grapes, a little sugar and baste with oil.

 Bake in the oven for about 30 minutes.

Suggestions : Add 200 g  walnuts 

Many times it’s covered  with a second  layer of dough and a second layer of grapes, sugar and oil

It’s possible to add  some Evoo  in which we previously cooked some rosemary for a minute.

Serve it with a good  glass of Chianti Classico wine !
