Pasta with fresh anchovies is a simple and tasty dish based on fish to be prepared in a very short time; a recipe to be made in White or with Cherry Tomatoes, only with Anchovies or by adding other Ingredients. For example, in today’s recipe I decided to add dried tomatoes and capers… and also a drizzle of wild fennel:so good!

Ingredients for 2 people

 100 g =20 fresh anchovies already cleaned

 1 small onion

 7 cherry tomatoes

 1 pinch of wild fennel optional

 7 dried tomatoes optional

 1 tablespoon capers optional

EVOO  

salt and pepper

 optional chilli

 200 g= 2 cups dry pasta

Preparation

Put the water to boil for the pasta

Slice the onion

In a large-bottomed pan, pour 2 drizzles of EVOO, the onion and the chilli pepper.

Cook on a low flame.

Also add the dried tomatoes into small pieces and the capers.

Wash the tomatoes and cut them into small pieces. Togliete dal fuoco e cuocete la pasta nell’acqua. Add the anchovies and mix for 2 minutes.

Add two ladles of the pasta water

Add a pinch of fennel When the pasta is al dente, drain it and transfer it to the pan with the anchovies. Mix by adding cooking water.

Serve the pasta with fresh anchovies and, if you like, add some toasted breadcrumbs.

Pasta with anchovies can be kept in the fridge for 2 days. To warm it up, fry it in a pan, it’s delicious!
