1. pizza is undoubtedly one of the most loved and cooked foods in the world, but there is a big difference between a pizza and a good pizza. Beyond the fact that you prefer it high, low, crunchy or Neapolitan, the main aspect is the leavening. A poorly leavened or poorly leavened pizza is the main cause of night thirst. This is because the enzymes contained in yeast, if they have not undergone a long maturation ,they continue their process in the intestine. For this to happen, water is needed, and this is the reason for thirst. This explains why UNESCO defines the art of Neapolitan pizzaiuoli as an intangible heritage of humanity.
So choose pizzas with a long leavening (there are more and more places that offer them) so as to avoid the annoyance of night thirst.

Remedies for thirst after pizza
1.Choose pizzas with a long leavening. Of course, the first time you go to a pizzeria you can’t know how much the leavening was, but after eating a pizza in a pizzeria, or get it delivered or a baked frozen pizza, if you are thirsty know that it is better to pay attention to the pizzeria or the company that produces the pizzas you eat.
2.Accompany the pizza with vegetables, even raw. A salad is perfect, but choosing pizza with eggplant, zucchini and bell peppers/capsicum, vegetables rich in potassium, can also be considered a great way to counteract thirst.

Loved this article. Here in the States we kind of like pizza with beer. I prefer a nice Sangiovese. So if I get thirsty, I’ll just drink a little more!!!

In Italy it was quite common to have pizza with beer probably becasue beer was less expensive and also matching better with the beer yeast in the pizza,but nowadays there are many variations :also rose wine with pizza.Anyway Sangiovese is good !Ciao

Sorodough pizza is great.We tend not to suggest sorodough because it needs a daily control that is not so easy for everybody.People working in a pizzeria can do it but other people may not have the time to take care of it. And sincerely using a small quantity of beer yeast and letting the dough leaven long, is as good as sorodough.Thanks for being with us .Ciao
