The mandarin marmalade is really fabulous if you love citrus scent.
For the preparation of the mandarin marmalade you will have to use some fruits not chemically treated because they are used in full with the whole peel.
1,5 kg of mandarins
600 grams of sugar
1 pinch of cinnamon(if you like it)
Remove the peduncle from the mandarins and wash them well under running water.
Fill a large pot with water and when it starts to boil, transfer the mandarins.
Boil over a low flame for 30 minutes, then drain and let cool.
Then cut them into four and remove the seeds inside.
Put the mandarins back in the pot and mince them, with all the peel, helping yourself with a mixer. Add the cinnamon.
Add the sugar, mix and cook for about 40 minutes.Stir often.
Test the density of the jam.
Once ready, transfer immediately to pre-sterilized jars. Close the jars and boil them in water for 40 minutes .Let them cool and then turn them upside down.You’re getting 5 jars.
Perfect to be served on bread, on a cake but try it with white meat,too !!!
