In Italy there are many wines and many cocktails but also non-alcoholic thirst-quenching drinks such as spuma and cedrata.

Sparkling, tasty and fresh, the cedrata is a vintage drink, based on cedar fruits, which never goes out of fashion. It is a drink with a bitter aftertaste suitable for everyone because it is non-alcoholic.

Cedrata: industrial production

Citrus medica cedars grown on the shores of Lake Garda were originally used to make the drink, while today the “Diamante” variety cedars from Calabria are used.

History

It all started in a spice shop, pharmacy and then in 1921 the Cedrata Tassoni syrup was created, advertised with beautiful black and white Art Nouveau posters.

 In 1956, the current carbonated soft drink Tassoni Soda was created from the syrup with the addition of water and carbon dioxide. It is a non-alcoholic soft drink

In the seventies, the advertisement was sung by the very famous Mina.

 Taste it by pouring 2.5 cl = 1 ½ tbs of Bitter into a glass with ice and add a small bottle of Cedrata Tassoni Soda. Mix and garnish with orange slice.

Cedar syrup

Cedar syrup is a concentrated product from which you can prepare a tasty cedar at home.

easy recipe to prepare this tasty drink. • 1 kg =35 ounces of untreated medium-sized cedars

• 350 g =1 1/2 cup.of sugar

• 3.5 dl = 1 ½ cup of water

• 10 g = 1 tbsp.of citric acid

Preparation. Peel the rinds from the cedars with a potato peeler, without taking the white part. Cut the cedar in 2 halves and squeeze it. Filter the juice through a sieve and blend it in a bowl together with the peels with an immersion blender or a mixer. Now combine sugar and citric acid and add water. Blend everything again to reduce it to a puree, which you will leave to macerate for at least 24 hours covered in transparent film. Filter again through a sieve lined with a cotton cloth.

Pour into a sterilized glass bottle and keep for 2 weeks in the fridge. If you want to keep it for longer (up to 8 months), you must proceed with pasteurization of the container. Syrup is used in a ratio of 1:10 with sparkling water. Cedrata: home made drink

Once the cedar syrup has been prepared, you can use it to make your cedrata, both smooth and sparkling. You can dilute the syrup with carbonated or still water, according to your taste.

It can be served cold with the addition of a few ice cubes and a few mint leaves, if desired. This results in a natural drink.

Use of Cedar

In addition to the preparation of non-alcoholic drinks, cedar peels are also used to make tasty, candied fruit and the essential oil of cedar used to reinvigorate the hair, not to be confused with the essential oil of cedar wood, which is instead distilled from the wood of the Atlantic cedar tree, a conifer found on the Mediterranean coast of Africa.
