As we live in the country we do not have easy availability to a lot of fish but we can get sword fish or other and we’re glad to realise a Lemon Fish piccata that gives an extra hint to the fish taste.

It’s an easy and fast recipe, perfect in Summer or for Pescatarian friends

PESCE SPADA AL LIMONE

Ingredients for 2/3 people

 2 1-inch-thick swordfish fillets (about 6 ounces each)

1 spring onion or shallot

fine salt

black pepper, freshly ground

1 large organic lemon, juice and grated zest

2 tablespoons of extra virgin olive oil

1 small glass of dry white wine or limoncello

a bunch of chives or mint

1 chili pepper

a sprig of rosemary

Tools

1 pan to cook the fish

1 chopping board

1 knife or mezza luna

lemon zest grater

1 whisk or fork

Preparation

  • In a bowl pour  the juice and grated rind of lemon, 1 tablespoon of oil, freshly ground pepper, chopped peperoncino.
  • Mix well with a whisk and dip the fish in the marinade.
  • Cover the bowl with plastic wrap and keep cool for half an hour
  • Heat the oil in a saucepan; and brown the fish over high heat, making it brown well on all sides.
  • Cut the onion into thin slices, after having peeled it, and add it to the fish, with a pinch of salt.
  • Add the marinade left in the bowl and, after a minute, sprinkle with white wine or limoncello, lower the heat and cook covered for about 5 minutes
  • Add the aromatic herbs
  • Serve at room temperature
