As 2025 comes to a close, we want to say thank you  and we’ve decided to do with the recipe that has been the most unexpected during our classes this year.

This is what would be usually considered an unexpected  dish as the ingredients are simple chicken breast, fresh lemons, herb and wine but the final flavour and taste is surprising.

 LEMON CHICKEN

Ingredients for 6/8 people

800 g  = 1.5 pounds of chicken breast

1 spring onion or shallot

fine salt

black pepper, freshly ground

2 large organic lemons, juice and grated rind

2 tablespoons of extra virgin olive oil

1 small glass of dry white wine or limoncello

a bunch of chives or mint

1 chili pepper

a sprig of rosemary

Tools

1 casserole to cook the chicken

1 chopping board

1 knife or mezza luna

lemon zest grater

cooking string(if available)

1 whisk or fork

Preparation

  • Tie  the chicken with kitchen string to keep it in shape
  • Pour some fine salt on a dish and lightly roll the chicken on it(don’t worry the chicken will not result too salty but it will better absorb the lemon marinate)
  • In a bowl pour  juice  the lemons and grate the zest
  • Add 1 tablespoon of oil, freshly ground pepper, chopped peperoncino.
  • Mix well with a whisk and dip the breast in the marinade.
  • Cover the bowl with plastic wrap and keep cool for an hour, turning the meat after half an hour.
  • Heat the oil in a saucepan; and brown the chicken over high heat, making it brown well on all sides.
  • Cut the shallot into thin slices, after having peeled it, and add it to the chicken, with a pinch of salt.
  • Add the marinade left in the bowl and, after a minute, sprinkle with white wine or limoncello, lower the heat and cook covered for about 40 minutes
  • Add the aromatic herbs halfway through cooking and, if the sauce gets too dry, add a little hot water.
  • Let the roast rest for ten minutes (covered with aluminum paper) before slicing it.
  • Slice the meat, sprinkle it with the sauce and serve at room temperature

This chicken may be served with roasted bell peppers, fresh tomatoes,potatoes, zucchini
