Have you ever tried to mix fresh herbs to create a crostini sauce? Crostini are a good dish as an appetizer, or just next to a slice of good cheese or salami and it’s so nice to use fresh herbs.

  3 tsp. of parsley

½spoonful of tarragon 

5 mint leaves

3 tsp. of capers(optional)

1 hard-boiled egg

2 tomatoes

½ small glass of EVOO

Salt and Pepper

Chop up parsley, tarragon, mint, capers, and egg. Add to a bowl with a  spoonful of oil and salt. Why the hard-boiled egg? Just to give more consistency to the sauce. The egg will absorb the taste of the herbs and you will never notice it is there.

 Cut the tomatoes into small pieces, and put them in another bowl.

Place the two bowls in the fridge for one hour.

Spread the green sauce on a slice of bread.

Add some marinated tomatoes
