Blue Crab Crostini-Crostini al Granchio Blu

A slice of bread ,called crostini, with a nice sauce or light mixture on top is always a perfect appetizer , street food or a whole meal.We always choose different toppings and this time we have mixed the famous or infamous Blue crab and some tomatoes .A simple mixture with a great taste.

Today we’re talking about Blue Crab, also known as Blue King Crab, a species that arrived in the Mediterranean from the waters of South America, particularly aggressive but also incredibly delicious.

This species is not native to our seas, it is also depopulating here and by feeding on everything it finds, it has proven to be a threat to biodiversity

Although the Blue Crab represents a danger to the Mediterranean marine ecosystem, it is definitely a gastronomic delicacy, so what can we do… let’s help the environment and start eating this colorful and tasty crustacean!

Many chefs have praised its properties and delicacy and this ingredient has now fully entered the menus of even starred restaurants.

HOW TO COOK BLUE CRAB

The BLUE CRAB is a versatile crustacean and offers itself to many uses in the kitchen. For its cooking we  can :

* steam cooking is the most suitable method because the heat is indirect and more delicate;

*simple boiling as you would do to cook octopus even if the times are significantly reduced (just 10 minutes) so as not to ruin the meat too much

*cooking in a pan to prepare a sauce for pasta, perhaps together with fresh cherry tomatoes and a sprinkling of chopped parsley;

*grilled

 *frying. In this case, given its size, it is not possible to cook it with all the carapace, so I advise you to remove the pulp from the crab, season it, form a sort of meatball and then, once breaded, fry it.

TO PREPARE THE BLUE CRAB CROSTINI
Intrigued by this crab, we wanted to try it in the simplest way so as not to risk mixing its flavor with others and therefore we decided to take some crabs already cleaned and cooked and prepare them simply.

4 boiled blue crabs

6 cherry tomatoes

A sprig of parsley

1 tablespoon EVOO

Salt and pepper

Remove the pulp from the crabs and blend together with the cherry tomatoes, adding salt, pepper and oil
Serve this sauce on a small slice of bread.
I assure you that it is worth it because the flavor is delicious
