
Who knows me, knows I love rice in every form and every dish.Probably because I was born in Vercelli.Vercelli (North of Italy near Turin)is considered as the Italian capital of rice, especially risotto, due to the fact of being the epicenter of rice production not only in Italy, but also in the entire European continent. Vercelli began cultivating rice in the 15th century and the territory is blanketed in rice paddies. Nowadays, this area is associated with the excellence of its rice due to a gret tradition, combined with advanced manufacturing technology and a cultivation of 100 different types of rice!
For this reason for my birthday I received a collection of rice products and rice in different colors.
Therefore I started using more rice flour, too. Without even thinking of all the advantages of this flour. First of all perfect for those who need gluten free.
For today we have RICE FLOUR COOKIES /BISCUITS

Ingredients
• egg 1
• Sugar 50 g
• Sunflower seed oil 50 g
• Rice flour 200 g
• Vanillin 1 sachet
• Baking powder for cakes 8 g.
• Water 30 g
Preparation
1. Place the egg in a bowl, beat it lightly and then add the sugar and flour, start mixing by also adding the oil, vanillin, yeast and water, knead until you obtain a smooth dough without lumps .
2. Roll out the dough with a rolling pin between two sheets of baking paper and cut the biscuits into the shape you prefer.
3. Place the cookies/biscuits on a baking tray with baking paper and bake in a preheated oven at 180° /360°F for about 20 minutes but adjust as always with your oven.

Being a rich source of complex carbohydrates, it ensures a slow release of glucose into the blood and is therefore able to provide long-term energy. This flour is completely gluten-free and is therefore suitable for those who are intolerant to this substance and for celiacs.

Try these cookies/biscuits ,so delicate and crumbly, perfect for serving alone, with a Italian Homemade Sipping hot chocolate on a rainy day or with a delicious zabaione to warm you up.
These look delicious and so easy to make. I’ve never eaten rice flower cookies, I’ll have to give them a try.
