Stuffed squid is a delicious dish, much easier to prepare than you might think.
Similar to calamari, which we consider their cousins, they are equally tasty andcan be interchanged
We can serve them to liven up everyday cooking or even during the holidays.
Stuffed squid recipe
As we said, the recipe is very simple, so let’s see how to cook stuffed squid.

INGREDIENTS

  • 12 medium squid or calamari (already gutted)
  • 4 anchovy fillets in oil
  • 1 cup soft inside of fresh bread,
  • 1 egg
  • 1 lemon
  • 3 tablespoons chopped parsley
  • 1 small garlic clove
  • breadcrumbs
  • oil
  • salt
  • pepper

METHOD
Cut the tentacles of the squid and blanch them for 10 minutes in salted water acidulated with a little lemon juice.
Drain them and chop them together with the parsley, garlic and anchovy fillets.
Gather the chopped ingredients in a bowl, add the soft inside of bread, beaten egg, salt, pepper and mix.

In the end you should obtain a fairly consistent mixture, if not add a spoonful of very fine breadcrumbs.
With this mixture fill the raw squid bags and then sew the opening with needleand white thread or fix them with toothpicks

Don’t be surprised if the squids are not completely stuffed as they will reduce very much in cooking and so the filling is not going to come out.

Place the bags in a baking tray well brushed with oil, season them with two turns of oil poured in a drizzle and cook in a hot oven at 175 C° /350F°for about 20 minutes.
Cooking can also be done on the stove at low heat and in this case it will take about 30 minutes.
Remove, arrange the squid on the dish and serve.D

As you can see this is a simple and quick dish and it makes you enjoy squid much more.
