
Talking to friends and guests during cookery classes we discovered that Zucchinis seem to be the vegetables that best grow in the orchards/ vegetable gardens around the world and so we never have too many recipes with them. Tortino della Lucchesia simple but delicious recipe. This savoury cake is named Lucchesia because it comes from the area near Lucca.

6 basil leaves
½ tbsp parsley
1 garlic clove1Kg courgettes /zucchini
5 tbsp virgin olive oil
4 tbsp grated Parmigiano Reggiano cheese
5 eggs
4 tbsp breadcrumbs
Salt and pepper
2 tbsp grated Pecorino cheese

Chop parsley, basil and garlic.Great the Parmigiano
and the Pecorino cheeses.
Slice the courgettes/zucchini, brown them in a frying pan with the oil and the chopped herbs. Cook over a moderate flame until they begin to fall apart. Add two pinches of salt.

Mix the grated Parmesan and pecorino, the eggs, 2 spoonfuls of breadcrumbs, salt and pepper.
Add the zucchini/courgettes. Mix the ingredients well, pour the mixture into an oiled baking tray.

Sprinkle the top with the remaining breadcrumbs.
Place in the oven at 180°C for 30 minutes.

Serve it hot or cold. With a slice of focaccia ?

You can avoid the Pecorino cheese, or use many other vegetables such as green beans or spinach.
