Party Cereal Canape Bread in Tubular Baking Mold

Delicious and tasty bread with cereal flour cooked in a tubular loaf baking mold. Excellent for decorated bread shapes for every occasion

Obviously, the same recipe, can be performed in a classic plum cake mold.

We have used the tubular mold by Birkmann

 With this bread you can prepare delicious canapés

Ingredients for a Birkmann mould in the shape of a flower

100 gr. =3/4 cup flour 00/all purpose/plain flour

100 gr. =3/4 cup cereal flour substituted /Manitoba / 0 flour/350-405 W flour**

80 ml = 1/3 cup water

40 ml = 1/6 cup milk

half a teaspoon of salt

16 gr.=1/2 oz. fresh brewer’s yeast

27 gr.=1 oz. of softened butter

oil for greasing a mold

Equipment:

Birkmann shaped tube, alternatively a plum cake mold from 26 –

28 cm./ca.10 inch.

2 large bowls

Preparation:

Let the milk warm in a saucepan, without letting it heat up too much

Dissolve the brewer’s yeast in the water

Add this water to the milk

Put the liquids in a bowl

Add the sifted 00 flour, flour with cereals, very soft  butter salt

Mix the ingredients and knead the dough very well, until it comes off the walls of the bowl

Put in a bowl, cover, and let it rise until doubling of its volume.

When the dough is well leavened, pass it on a work surface, creating a long cylinder.

Grease the inside of the mold with the help of a brush, or spray oil.

 It’s not essential to oil the mold, but allows you to obtain a bread with the crispy crust.

Put a cap below the tube and drop the dough inside

Close with the other cap and let it rise again, until the dough arrives almost to the edge. (About 10 minutes)

Preheat the oven at 180°C/350°F

As it cooks, it grows further and will also tend to get out of the mold.

Bake in the preheated oven for about 45 ° minutes, but check the cooking,

The rind must be golden.

Let it cool in the mold for a few minutes and take it out.

Slice it and spread with the preferred canape sauce.
