Born in Vercelli, the rice district in Northern Italy that plays a key role in the agri-
food industry in our country , I can define myself a rice addict.
We go everywhere to taste rice and different ways of cultivation and cooking and now we introduce you to the Rosso Rosetta of the Melotti company from near Verona.
We tasted their rices and tried Mamma Rosetta’s recipes .
Here we are with a beautiful Red Rice.

Aromatic Salad of Rosso Rosetta Rice with Zucchini and Tuna(idea from Mamma Rosetta’s Recipes)
Ingredients 4 servings
400 gr.= 2 cups Melotti Rosso Rosetta Rice

250 gr.= 8 oz. fresh tuna or fillets(optional)
2 zucchini/courgettes
½ onion
2 Tbsp. capers
½ tbsp. marjoram
½ tbsp sage(optional)
2 tbsp. grated pistachios
2 tbsp. pine nuts ( optional)
1 clove garlic
EVOO
Salt /black pepper
Preparation
Cook the rice in salted water for 40 minutes, drain it and let it cool.
Slice the onion.
Cut the zucchini in small cubes.
In a pan sauté a tbs. EVOO ,add the onion
Add the zucchini, salt and pepper
Cook for 10 minutes.
Add the herbs, pistachios and pine nuts.
Sauté 1 tbsp. EVOO in a pan, add the garlic and then tuna and capers.
Cook it for 1 minute
Adjust with salt and pepper.
Mix the tuna with the rice and serve.
It’s a great dish also without the tuna.
