
Gnocchi: the dish that attracts many people and scare many others.
It depends if people tasted the right ones as many times people taste those ones which are like bullets, simply because they have been fixed with too much flour or some additives to prevent them from fermentation.
While, if you have been so lucky to taste the good ones, the ones which melt in your mouth, you’ll never forget them. When you learn how to make them yourselves you would love to make more and more and the curiosity is always the same: which potatoes may I use, may I try some other potatoes?
For this reason we tried them with purple potatoes and the result was great.

The funniest thing has been that when making them they are purple, when cooked they become blue and if you let them cool …. they will be purple again.

Anyway the taste is great , the dish effect gives possibilities .The recipe is the same as for the white traditional ones and the procedure, too. So you can read the post about traditional gnocchi with videos.
Ingredients for 4 persons
purple potatoes 500 gr= 1.10 pounds
egg 1
Fine Salt 1Pinch = 1 tsp.
00 Flour plain/all-purpose flour 125g =5 oz=ca. 1/2 US Cup
baking powder 8 gr =2tsp.
- Boil the potatoes, mash them and leave them to cool.
- Add flour, salt, egg and baking powder.
- Knead together quickly and shape the mixture into a ball.
- Take small portions of pasta from the dough and place them on the rolling board.
- Make them into finger-sized cylinders.
- Cut the cylinders into 2cm=1/2 inch pieces.
- Then form them into gnocchi with the appropriate utensil such as with a fork.
- Place them in salted, boiling water and wait for them to come up to the surface.
- Now drain them and serve with the sauce you prefer.

You can serve purple/blue gnocchi with pesto sauce, tomato sauce, Alfredo sauce, bolognese sauce.Can you just imagine the cromatic effect you prefer?Try them, you’re going to be very satisfied because the taste is completely the same as the others but the new color is a different new possibility when serving them.

Totally the same.If you eat purple potatoes by themselves they tend to taste earthy, but in the gnocchi they are like the others.
