Let’s start with a small dish, so full of flavor and exciting on the palate.

Parmigano Puff Pastry Triangles.

Serves 4

Prep time: 10 minutes

Cook time: 20 minutes

Ingredients

1 spring onion

EVOO

Salt

Pepper

1 sprig rosemary

1 roll of rectangular puff pastry

80 gr.=1/3 cup grated Parmigiano Reggiano

1 egg yolk

Water

Direction 

Chop the spring onion.

Sauté it in a pan with a drizzle of oil for 4-5 minutes. Season lightly with salt and pepper.

Let it cool.

Chop the rosemary needles.

Unroll the puff pastry, sprinkle with the spring onion, rosemary, and  half of the grated Parmigiano cheese.

Fold the pastry over itself and cut it into triangles.

Brush the surface with the egg yolk beaten with a teaspoon of water.

Sprinkle with Parmigiano cheese and cook in the air fryer basket at 180°C for 12-15 minutes, turning the triangles 3-5 minutes before the end of cooking.

Don’t forget that Rosemary can add a lot of flavour ,even in small quantities,and Parmigiano is such a special cheese,lactose free.
