
Meatless Lasagna
Christmas Day is approaching ,when lasagna is a must on the tables of Italian families but we can change them a bit. Like the best recipes of our tradition, the recipe for lasagne caprese is a useful suggestion to propose a different version of the beloved Italian dish. . This lasagna is lighter because it does not include the use of meat for meat sauce, so really ideal for vegetarians but also for the summer season!
Ingredients

lasagna to taste(home made or pre done)
For the filling and cooking
2 and a half cups (600 ml )tomato sauce
1 cup (250 g )mozzarella
1 cup (250 g) ricotta cheese
3 tbsp EVOO
4 tbsp. grated cheese (grana, parmigiano or pecorino cheese)
Pesto to taste( optional)
A clove of garlic
A few basil leaves
Salt pepper
Container for lasagne 1 if it is 8 inch.x 8 inch.( cm20x cm 20) or
4 if they are 3 inch.x 3 inch.( cm7x 7cm)
You can use vegan cheeses ,lactose free cheeses and GF lasagne.
Preparation
Cook the tomato sauce with garlic, a drizzle of oil, a pinch of salt and a few basil leaves.
Cut the mozzarella into thin slices.
In a baking tray pour some tomato sauce.

Start with 1 sheet of lasagna
Season with tomato sauce, mozzarella, ricotta,1tsp. of pesto and Parmigiano cheese
Continue alternating the layers until the pan is filled.
Finish with mozzarella, pesto and parmigiano.


And now we put the lasagna in the oven for about twenty minutes at 180°C/350°F.
We remove from the oven and serve.

Today we’re cooking white and red lasagna. This is a typical dish for Christmas in Italy in all their variations from family to family.
This is one of the many recipes from our family: a dish to make everybody happy with a faster, easier, and vegetarian lasagna.
We think also to have a nice lasagna for a party or as a desk lunch or just not to waste any leftover.
So we’re using nice, cute little containers.
Anyway, whatever baking container you’re using this lasagna will be perfect every moment to smell festivities around you.
