
One of the simplest recipes with aubergines/eggplants but very satisfying, perfect as an aperitif or for a quick dinner.

INGREDIENTS
. 2 aubergines/eggplants
• 12 anchovy fillets(optional)
• 2 peeled tomatoes
• 1 mozzarella( you can use also a lactose free mozarella)
• 6 tablespoons of E.V.O.O.
• fresh basil(optional) or oregano
• salt
• pepper
Have you ever made pizzas with vegetables? This is the right occasion to take note of this very simple recipe.
Few ingredients for a delicious dish. Easy, light and quick to prepare, they are pizzas but they can become rolls if you prefer to serve them as finger food.
You can enjoy them both hot and warm
HOW TO PREPARE: EGGPLANT PIZZAS
To prepare the eggplants/aubergine pizzas, start by washing and cutting the eggplants/aubergines into thick slices of about 1.5 cm(1 inch) in the sense of the width
Arrange the eggplants/aubergine slices on a baking tray lined with parchment paper and with a sharp knife make small cuts on the pulp of each slice, salt and drizzle with E.V.O..O
. Then cook them in the oven at 180°C /350 °F for about 20 minutes with the oven in static mode.

Proceed mashing the tomatoes in a bowl and then add them on top of the eggplant/aubergine slices
On each slice add the cheese and an anchovy fillet for each pizza.
Bake for 15 minutes at 180°C.
Once cooked, remove from the oven and, before serving, add a fresh basil leaf or a little oregano.
Your eggplant/ aubergine pizzas are ready to be enjoyed. Enjoy your meal!
