
Making the vegetable broth cube at home is easy, cheap and above all it is healthy since there are no thickeners, preservatives, dyes or similar.
Two rules to follow for the preparation of this recipe:
– the vegetables must be weighed when clean as the salt to be added must be 1/3 of the total weight of the vegetables, neither more nor less, this to allow the right conservation of the cube and the right degree of salinity which must always be understood as 1 cube for each liter of water. My vegetables weighed 750 grams clean and I added 250 grams of salt. It’s like 27 ounces mixed vegetables and 9 ounces salt
– no water must be added because the vegetables already release liquid during cooking
Ingredients for 42 vegetable cubes:

1courgette/zucchini 1 Carrot 200 gr / 7 oz. of pumpkin 1 clove garlic 1 onion
200 gr /7 oz.of celery 5 cherry tomatoes parsley basil 2 tablespoons of oil
250 grams /9 oz.of salt
Wash the vegetables, dry them and cut them into small pieces. Weigh them to adjust with the salt to add: the salt must be 1/3 of the weight of the vegetables. My vegetables weighed 750 grams clean and I added 250 grams of salt. It’s like 27 ounces mixed vegetables and 9 ounces salt
Put 2 tablespoons of oil in the bottom of a pan, then add the vegetables, cover and cook for about 10 minutes.
Now add the salt, stir, then cover with the lid and let the vegetables cook for about 1 hour, over medium-low heat.
When the vegetables are cooked, blend everything with the hand blender.
Cook the mixture for another 20 minutes.
The mixture should shrink until it detaches from the edges of the pot.
Now pour the mixture on a tray and give it a rectangular shape.

Once your vegetable broth is ready you can decide :
-to keep it in small glass jars previously sterilized and take a teaspoon each time
-pour the mixture into the ice molds so as to have them already portioned
-spread the mixture on a tray and cut everything into cubes and put in the freezer to harden. Now remove the vegetable cubes gently, be careful because they are not hard. Wrap them in plastic and place them in a container that you can keep in the freezer, taking one cube at a time whenever necessary.
The consistency of the cubes is not very hard, they will always remain a little grainy thanks to the presence of salt which will inhibit their complete freezing
The cube can be kept for one month in the fridge or 6 months in the freezer.
