Carciofi Ripieni                   

Stuffed artichokes are always a perfect choice to make these vegetables really special.

Sevings 4 persons

4 artichokes Mammole=big ones

4 anchovies

4 tbs.breadcrumbs


1 tbs. of capers

1 clove of garlic

2 tbs. EVOO

1 lemon

Salt, pepper

Clean the artichokes: eliminate the outer leaves, and round the bottom of the artichokes.

Eliminate inner hay and place them in water and lemon juice.

Chop garlic and parsley.

In a pan pour 2 tbs. EVOO and dissolve the anchovies in it.

Add breadcrumbs, garlic and parsley, and capers.

Enlarge the leaves of artichokes

Mix well and spread the mixture inside each artichoke. 

Place the artichokes upright in an oven dish.

Sprinkle them with the remaining oil and a glass of water.

Place in the oven for approx.30 minutes at a low temperature (160°C/320°F).

Serve them warm.
