Sausage and stracchino crostini are a classic Tuscan appetizer—simple yet delicious. Ideal for aperitifs or standing buffets, these tasty bruschetta are incredibly easy to make, making them perfect for a quick meal as well, perhaps paired with a side of vegetables.

Traditionally, they can also be made using Tuscan sausage—the kind safe to eat raw—though that version is only advisable if you know the producer and can truly vouch for the meat’s freshness. So, we’ll stick to the method of cooking them in the oven or an air fryer.

This is one of those beloved “dinner-saver” recipes: simple and quick to prepare. These bruschetta pair beautifully with a salad or a side of vegetables, but they also work wonderfully after a plate of pasta with tomato sauce, or simply served on a small slice of bread.

Italian dishes are extremely simple: the important thing is the quality of the ingredients used.

Crostoni alla salsiccia, called crostini if made with a small slice of toasted bread, and crostoni  if done with a large slice of bread,  are beloved. You can eat them raw if the sausages are fresh, up to the day before, and if you can trust the butcher, or cooked.
