Lemon Pasta Sauce

A very quick and cheap pasta dish prepared with just a few ingredients: the main ones are  fresh egg pasta fettuccine , cream, lemon zest and a generous sprinkling of cheese. Lemon fettuccine are a very easy recipe to make ,a dish with a delicate aroma and flavour. Perfect for a last minute  dinner with friends or a super quick lunch, just a few ingredients are enough to make a very light sauce, ideal for dressing  fresh egg pasta.

  • 2 cups fresh egg pasta fettuccine
  • 2 tbsp. EVOO
  • 2   organic lemons
  • 1 glass dry white wine
  • 1 cup heavy cream, or 1 cup soya yogurt or creamy cheese
  • 1 tsp. turmeric (not compulsory)


Bring water to boil in a large pot to cook the fresh egg pasta ,that needs 4 minutes to cook.

  1. Zest 1 lemon and squeeze 2 lemon juice
  2. Pour 2 tbsp. EVOO in the big skillet
  3. Set it over a medium heat
  4. Add the grated lemon zest and turmeric
  5. Stir it around for 2 minutes
  6. Pour in the white wine and lemon juice, add the salt, stir, and bring the liquids to a bubbling simmer.
  7. Let cook for a couple of minutes.
  8. Pour in the cream, or soya yogurt
  9. Cook, stirring occasionally, until the liquids reduce to a saucy consistency  2 or 3 minutes more.

Drain the pasta  and stir it into the skillet.

Serve with grated Parmigiano on top.
