Few ingredients to get something special.

10 white onions
3 chili peppers
Evoo
2 sprigs rosemary
Salt
It’s possible to prepare these onions and serve them but also preserve them for longer time.
The preparation of rosemary onions
- first wash the onions without peeling them
- bake them in the oven at 200 ° for about 20-25 minutes.
- Let them cool, remove the peel and cut them thinly.

- chop the chillies with rosemary
- add the chopped rosemary and chillies to the onions, season with salt and add 2 deciliters of oil, then leave overnight to rest in the refrigerator.
- They’re ready to be served.
The preservation of rosemary onions
- Take some hermetically sealed canning jars that you have already cleaned, pour the mixture and add more oil until you reach the edge of the containers. Close them, wrap them with a cloth and immerse them in a pot of warm water.
- Boil them by sterilizing them for an hour.
- Let the jars cool and store your rosemary onions in a cool, dry place.

These preparations are alwyas useful because cong back from work ,or preparing lunch box or for more formal dinners ,they can complete your meal adding taste to everything.
Consider to have canned onions ,sun dried tomatoes,caramelized red onions,or pickled eggs.
