Italian Vegetable Broth
Ingredients
- 1 carrot
- 1 red onion
- 1 stock of celery
- 2 potatoes
- 2 bay leaves
- 5 l. water
Cook the sliced vegetables and the bay leaves in abundant water with a pinch of rock salt.
Bring to a boil over a high flame and then let it simmer. Let it cook for an hour.Now your broth is ready to be served with any small pasta or tortellini cooked in it for 10 minutes.
If you like you can cook also a hen or a chicken with the vegetables,cooking it for two hours and skimming regularly.
