The first dish is often the main dish in Italian Cooking ,it has always been  considered such  and nowadays- because of a working insistent rhythm – it often becomes the only one consumed per meal.

What gives a lot of personality to the first courses is the combination with the right sauce, done with vegetables, meat or tomato. This is a very important point in a lesson about typical Italian cuisine.
