Beyond the vanilla and the chocolate gelato/ice cream, pistachio gelato/ice cream is often the most requested. It’s not easy to make gelato/ice cream with pistachios – very often salty ones are sold. The best way is then to get the pistachio cream.

At home with the ice cream maker we can make this beautiful gelato/ice cream ourselves.

Ingredients: 220 ml of whipping cream

              220 ml of milk

70 grams of sugar

  100 grams of pistachio cream

Combine milk, cream and sugar in a small saucepan, place on medium-low heat and cook until the sugar is completely melted.

Once the sugar has melted, turn off the heat, add the pistachio paste and mix well.

Pour the mixture into a low and wide  pan, let it cool, then refrigerate for at least 2 hours.

When the mixture is completely cold, you’ll notice that the deeper green pistachio colour is back.

Pour it into the ice cream maker and operate it according to the instructions: 15 minutes are enough with mine.

If you want a more intense green color, you can add a pinch of food coloring.Your pistachio gelato/ice cream is ready: you can serve it immediately or keep it in the freezer for up to 1 month

Last suggestion: it may seem strange but serving it with some  salted pistachios enhances its flavour.
