
With the last artichokes in season or just buying the ready artichokes hearts you can prepare a super tasty sauce for pasta

Artichokes Heart Sauce
350 gr,= 2 cups artichoke hearts
60 gr. =4 tbsp. butter
100 gr.= ½ cup black/green olives
100 gr. =3 slices prosciutto or prosciutto cotto
1 glass of white wine,
2 tbsp tomato puree or crushed tomatoes
Pepper Fine salt Oregano

Submerge the artichoke hearts in a little boiling water and cook for 8-10 minutes then drain them and cut into wedges.
Slice the prosciutto in long tiny strips
Melt in a pan 40 grams/2 tbsp. of butter and cook for 1 minute the pitted olives and the prosciutto.
Add the artichokes, stir and add white wine, which allow to boil over medium heat.

Incorporate 20 gr / 1 tbsp. butter and the tomato sauce, salt, pepper and simmer for about 10 minutes.
Finally add oregano
Boil the pasta in boiling water , drain and season it with the sauce
Serve immediately.
Add grated Parmigiano.
