The herbs pasta sauce is a typical example of Italian cuisine made of few but fresh and healthy ingredients. In this recipe we only use herbs, possibly fresh and tomato sauce or peeled tomatoes, whatever we have available. Cook your pasta and dress it with this sauce.

In the end the result is delicious.

Ingredients

  • 2 tbsp. Extra Virgin Olive Oil
  • 2 cloves of garlic
  • Half an onion
  • 1 sprig of rosemary
  • 1 sprig of sage
  • 1 bunch of parsley
  • 500g /2 cups tomato purée /passata/crushed or diced tomatoes
  • ½ tsp. of oregano
  • Salt and Pepper
  • grated Parmigiano
  • Fine salt to taste
  • Pepper to taste

Tools

  • 1 chopping board
  • 1 medium size pan
  • 1 mezzaluna (if available)
  • 1 spoon

PREPARATION

  • Finely chop the garlic and the onion
  • Separately chop the herbs
  • In a pan pour 2 tbsp. EVOO and lightly sauté the garlic and the onion for 3 minutes.
  • Then add the chopped herbs
  • Stir the ingredients for a few seconds over a low flame, then add the tomato purèe.
  • Add the oregano and then the pasta and sprinkle with grated parmigiano
  • Stir everything for a few minutes in the pan over a medium flame.
  • Serve immediately hot.

Suggestion:  add cream or a pepperoncino (hot chili pepper).

This sauce is great served immediately or prepared, placed in jars, sterilized or frozen. In this way we are ready for a last minute pasta: just cook the pasta, heat the sauce and we will have a very tasty dish.

Tips:

let’s just pay attention to how much herb we use, remembering that in summer they are much stronger because the sun strengthens them and therefore let’s not exaggerate with the quantity of herbs we use, especially rosemary which tends to “get noticed”.

In Italian the name of this sauce is Salsa agli Aromi,and aromi means flavors,fragrances because herbs are all of these.
