Chives have a wide variety of culinary uses as they match well with egg, cheese, baked potatoes, salads and perfect in sandwiches. They impart a light onion flavour in any dish and can be used interchangeably in recipes calling for onions .Here we suggest an easy but tasty recipe for a Crostini . Chives can be found fresh all year round and they can also be dry-frozen without much impairment to the taste .They keep their lovely green colour when cooked so they make a fancy addition to many dishes. CROSTINI ALL’ERBA CIPOLLINA

Servings 8

  • 150g robiola or stracchino cheese
  • a bunch of chives
  • a pinch of salt
  • white pepper
  • 10 small slices of bread
  1. Chop the chives and mix them with the cheese.
  2. Season with salt and pepper.
  3. Toast the slices of bread and then spread on the cream.
  4. Serve them as an appetizer
