In Sumer it’s always nice to prepare fresh dishes with vegetables and today we had some round zucchini /courgettes ready.Of course we could cook also with the long zucchini, but the round look so nice together with the tomatoes.These are two beautiful vegetables to stuff in many different ways and today we do a vegetarian filling.

4 large tomatoes 3 round zucchini /courgettes
6 spoonfuls breadcrumbs 6 spoonfuls Extra Virgin Olive Oil
3 cloves of garlic 1 sprig of parsley Salt and pepper

Chop garlic and parsley and gently cook them in the oil.
Add the breadcrumbs and toast them for about 10 minutes, stirring from time to time.
Cut the tomatoes in half horizontally, remove the seeds and part of the pulp which you will then chop and add to the toasted breadcrumbs.
Season with salt and pepper.
Fill the tomatoes with this mixture and then place them on a baking tray. Cook in the oven for approximately 15 minutes at 200°C.

Don’t forget it’s perfect also for your Italian Desk Lunch.

Looks good and easy. How long to cook zucchini? About twice as long as tomatoes?

No,when you empty the zucchini well they take the same time as the tomatoes.Of course they will keep the shape better but they ‘ll be ready.Buon appetito.
