
Last days I’ve been baking a lot of Biscotti as a gift for friends so ,at the last minute, I found myself with a large quantity of egg whites. What to do with them? Many ideas such as the salted meringues but the family was not interested in them so let’s do something else for dinner.

Savoury cake egg whites and butternut squash.
100 gr.= Pureed butternut squash
2 pinches=1tsp.fine salt
q.b.=as much as you like black Pepper
If you do not have a pureed butternut squash, slice it, cook it in the oven for 20 minutes and then puree it.

Mix together all the ingredients in a bowl with a fork
Pour the mix in a small oven dish.
Bake it in the oven for 20 minutes at 180°C/350 °F
It can be served by itself, next to a meat or fish dish or a charcuterie board.
Serve it hot or cold.
