Rose-shaped ravioli are perfect for many occasions. A bit of work but worth it. Are you getting ready for a party: Valentine’s Day, Mother’s Day or just to show off a little bit? I decided to serve them for my daughters’ Birthday.

You can use pre-cooked beetroot or beetroot powder to color them, but they are nice white or other colors.

The inside of ravioli can be varied, with cheeses, vegetables

On this occasion we opted for ricotta and cooked ham to make them delicate

The sauce with which to serve them is very varied and we chose pesto(recipe here) because the flavor is perfect and the effect of the dish is special.

A little calm and patience is required to prepare them

In short, a delicate dish that is beautiful to look at, a declaration of love

For the dough:

Ingredients for 4/5 persons

00 flour/all-purpose/plin flour 150g =Β 1 and 1/8 cups and some extra for the work

semolina/durum wheat flour 50 gr.=1/3 cup

eggs 2

 beetroot powder 20 gr.= 1/8 cup   or pre-cooked beetroot 100 g 2/3 cup  

 fine salt 1 tsp

 EVOO 3 tbs.

For the filling:

 cooked ham 80 gr.= 2/3 cup

ricotta cheese 80 gr.=2/3 cup

 fine salt & pepper to taste

Preparation of rose-shaped ravioli:

First of all, blend the pre-cooked beetroot and puree it.

Pour the flours in a bowl and in the center place the eggs with the beetroot puree,EVOO and salt.

Start mixing the ingredients with a fork and then proceed by hand

Knead vigorously until you obtain a firm and homogeneous dough.

When it is ready, form a ball and wrap it in cling film and let it rest for about half an hour.

In the meantime, chop the prosciutto cotto finely and prepare the filling by blending the ricotta with it. Finally add a pinch of salt and pepper

Once the resting time is over, take the dough and roll it out thinly and use a pastry cutter to cut out some circles.

Overlap 5 disks, moisten them with a little water to make them stick.

Place the filling in a sac a poche and make a line in the center of the disks.

Overlap the disks as in the image and make them adhere well moistening them with a little water

Start rolling the disks from one end, without pressing the filling too much.

Once rolled, spread the petals slightly.

Bring the water to the boil, salt it and immerse the roses delicately, a few at a time.

They cook for at least 7 minutes, consider they are like 5 ravioli together. Take them out of the water with a slotted spoon.

Delicately.

Drain the rose-shaped ravioli and place them on top of a pesto sauce. The recipe is here .

You can serve them with whatever sauce you prefer: cheese, butter, thick tomato sauce… any seasoning will do.
