
Tuscan Black cabbage and chickpea burger

Black cabbage is a winter vegetable rich in vitamins and mineral salts ,we talked about it in a post and in honor of World Pulses(dry legumes) day we combine it with chickpeas. Black cabbage and chickpea burgers are an easy to prepare and very versatile recipe. You can serve them with a side of fresh vegetables or with your favorite sauce.
INGREDIENTS
FOR 6 BURGERS
Black cabbage (to be cleaned) 200 g = 1 ¼ cup
Pre-cooked chickpeas (drained weight) 150 g= ca.1 cup
Breadcrumbs 160 g=ca. 1 cup( don’t forget Zero Waste Homemade breadcrumbs)
Garlic 1 clove
½ lemon juice
Eggs 1
Extra virgin olive oil to taste
Salt to taste
Black pepper to taste
TO COOK
Breadcrumbs to taste
Extra virgin olive oil to taste
HOW TO PREPARE BLACK CABBAGE AND CHICKPEA BURGERS
To prepare the black cabbage and chickpea burgers
1.clean the black cabbage by separating the stems from the leaves
2. cut the latter roughly
3. pour the black cabbage into a pan with boiling salted water and cook it for about ten minutes
4. drain it to eliminate excess water
5. in a pan, fry a clove of garlic in a drizzle of oil
6.add the well-drained cabbage salt, ,pepper and sauté for about 10 minutes over medium heat.
7.turn off the heat, remove the garlic and leave to cool
8.pour the drained chickpeas, the lemon juice, and the black cabbage into a blender
9.add the oil , salt, then blend so as to obtain a fairly coarse consistency, not perfectly smooth
10.add the egg, breadcrumbs, little by little
11. mix with a fork to mix everything well, adjusting the dose of breadcrumbs depending on the consistency
12.shape the burgers by compacting and flattening some of the mixture in the palm of your hand; or, to obtain a more precise shape you can use a glass or pastry cutter. With these doses you will obtain 6 burgers with a diameter of approximately 9 cm.(= 3.5 inches)
13. Lay them one by one on a tray lined with baking paper on which you have poured some more breadcrumbs and lightly cover both sides


14. place the burgers in a non-stick pan in which you have heated a drizzle of oil
15.Cook the burgers over medium heat for 5 minutes per side, until they have formed a golden crust
Your black cabbage and chickpea burgers are ready to be served with a side dish and sauce of your choice
