A Light Pasta Sauce?Sauce with Leeks.

There are 5 days to Christmas and there is a lot of excitement in the air and in the kitchens. We expect a day full of many good things to eat from appetizers to desserts. In many homes even more: two appetizers, two first courses, two second courses, vegetables and two desserts.

Preparing for so much we must clearly eat a little lighter in these 5 days.

So why not bring out the healthy pasta with Leek sauce, salsa ai Porri.

The simplest way

2 leeks – 3 tablespoons of extra virgin olive oil- salt- White pepper

 A little more fanciful,add

1/2 glass of cream- The juice of 1/2 lemon – parsley

Eliminate the outer leaves of the leeks and the  green part of the leaves if hard.

 Slice the white ones into thinly.

Put everything in a bowl full of water for 20 minutes to wash the leeks well.

Drain them.

 Pour the oil in a pan and season the leeks for a few minutes without coloring.

Boil the water for the pasta, add salt.

Wet the leeks with two ladles of the pasta water. Cook for about 10 minutes.

Add salt if necessary. 

Drain the pasta, pour it into the pan, stir and serve.

If you want the sauce a little more delicious, when it is cooking add the cream, the lemon juice and a little chopped parsley.

Serve with  grated Parmigiano or pecorino cheese.

Here we serve it with a whole wheat Fusilli shaped pasta by La Molisana.

It’s a good option to serve this sauce  with meat and not pasta .In this case use hot water instead of the pasta water and mix everything in the blender.
